Peanut butter granola

Crisp, crunchy and subtlety sweet - a wonderful way to start the day.

PEANUT BUTTER GRANOLA 

Ingredients

4 tbsp natural peanut butter

3 tbsp coconut oil

2 tbsp maple or rice syrup 

2 cups oats (preferably jumbo/thick cut)

1/2 cup unsweetened desiccated coconut

1/2 cup pumpkin seeds

1/4 tsp cinnamon

Pinch salt

1 tbsp coconut sugar

1 tsp vanilla extract

Method 

Preheat the oven to 180°C and line a baking tray with greaseproof paper.

Add the coconut oil, peanut butter and syrup to a medium sized pan and melt and mix together over a low to medium heat.

Once melted and beautifully smooth. Add in the rest of the ingredients, stirring thoroughly to ensure that everything is fully coated.

Pour on to the prepared tray and spread out evenly. Pop into the oven for 10 minutes. Give the granola a good stir to ensure even baking. Then pop back into the oven for another 10-15 minutes or until the granola is lovely and golden brown.

Leave to cool completely then transfer into airtight container.

Serve with ice cold almond milk and berries for a quick and delicious breakfast. Sprinkle on top of porridge, serve with fruit and yoghurt or enjoy however you fancy.
