Tiger nut butter (nut free alternative to nut butters)

If you can’t eat nuts, this one is for you. In any of my recipes that call for nut butter you can substitute it for this. You will need a decent food processor to get the creamiest consistency as tiger nuts don’t blend as easily as nuts. And don’t be concerned by the word nut, tiger nuts aren’t actually nuts they are tiny root vegetables.

TIGER NUT BUTTER 

Ingredients  

2 cups tiger nuts  or 1 1/2 cups tiger nut flour

1/3 cup of coconut oil - melted 

1/3 cup plant based milk

Generous pinch of salt

1 tsp vanilla extract 

Method

Add the tiger nuts to a food processor or high speed blender (I use a vitamix - use a food processor unless you have a blender that can handle making nut butters so you don’t burn out the motor) and grind until they resemble a flour. Add the remaining ingredients and blend, scraping down the sides as often as necessary until you’re left with a thick, smooth and creamy consistency. It might take a while due to the consistency of tiger nuts but stick with it and you’ll end up with something delicious. Tiger nuts are naturally really sweet so there’s no need to add any sugar/syrup. Due to the sweetness tiger nut butter also works beautifully with a sharp raspberry chia jam
