Passion fruit evokes the quintessential sense of summer days...drifting away but ah oh those su-uh-mmer nights a wella wella wella...I digress. It’s beautifully aromatic, bursting with flavour and often overlooked and underused. Don’t let your teenage memories of slathering the body shops passion fruit body butter over yourself top to toe to try and stave off your ever expanding collection of puberty induced stretch marks be the only dose of passion fruit in your life (just me...? Oh. Never mind then). This takes two minutes to throw together, does it’s thing while you sleep so you can wake up to a truly delicious breakfast to fuel your day ahead.
Passion fruit overnight oats (Serves 1)
2 passion fruits
1/2 cup (45g) oats
1 tbsp chia seeds
3/4 cup (250ml) almond milk (or dairy free milk of your choice)
1 tbsp coconut yoghurt
Optional: 1 tsp maple syrup
Add the pulp of one passion fruit along with the remaining ingredients and stir until combined. Leave in the fridge in an air tight container overnight.
Stir, serve, top with the remaining passion fruit and any other toppings of your choice.
