Strawberry and coconut smoothie

Smoothies and juices can be difficult for many people with digestive issues to tolerate. Fruit, even those which are classified as low fodmap and within the suggested 'safe' portion size, can leave you feeling sick, bloated and inflamed one day and absolutely fine on a different day. It's confusing and frustrating and can often leave people reluctant to consume fruit at all which is such a shame, but completely understandable. This smoothie is well balanced, full of flavour and should keep you feeling full without laying heavily in your stomach. I really hope you enjoy it.

STRAWBERRY AND COCONUT SMOOTHIE (SERVES 1)

Ingredients

8 - 10 medium strawberries 

1/4 cup oats 

1/4 cup of unsweetened desiccated coconut 

1 tsp vanilla extract

1 cup plant-based milk 

a small handful of ice cubes

Method

Add all of the ingredients to a high-speed blender and blitz for a minute or so until it is beautifully smooth and creamy. Serve immediately and enjoy.

Note: If you have any left over, store in an airtight glass bottle in the fridge and shake before serving as separation may naturally occur.
