Pineapple, passion fruit and coconut smoothie

Summer sunshine in a glass, yes please! Passion fruit is one of my favourite flavours and scents of all time. (Shout out to the body shop passion fruit body butter your mum bought you for every birthday and Christmas throughout your teenage years! Just mine? Never mind, ay). So many of my favourite foods, especially summery fruits, are on the list of things that make my stomach become an angry, inflamed enemy of progress at the minute, RIP mango and watermelon 😭. However, passion fruit and pineapple can still be thoroughly enjoyed when you’re living that low fodmap life. This drink is so bloody lovely. It’s like a melted ‘solero’ ice lolly that brings back a total sense of 90’s nostalgia. If you want to make this even thicker or more of a smoothie bowl, feel free to add oats, protein powder and/or frozen banana or my banana free smoothie cubes. 

 

PINEAPPLE AND PASSION FRUIT SMOOTHIE 

Ingredients 

1 cup frozen pineapple

1 passion fruit

3/4 cup plant based milk

2 tablespoons coconut yoghurt. I use Coyo

4 ice cubes 

 

Method

Add all of the ingredients to a highspeed blender and blend until beautifully smooth.  Serve and enjoy 🍍🥥
