The Perfect Roast Parsnips






Serves 4: 

1kg parsnips

½ a bunch of fresh thyme

1 tablespoon of plain gluten free flour

2 tablespoons maple syrup or runny honey for non vegan option.

2 tablespoons olive oil

Salt and pepper



Preheat the oven to 180°c.

Scrub the parsnips clean, leave the skin on then slice in half lengthways.

Pop the parsnips into boiling salted water for 10 minutes, then drain well.

Pick the thyme leaves off the stalk. Toss the parsnips with the maple or honey, thyme, a pinch of sea salt and black pepper, flour and oil.

Tip into a roasting tray and spread out in one layer, then roast for 40 minutes, or until beautifully golden.
