Low fodmap Mash

This makes the creamiest mash with a mixture of Maris pipers and sweet potatoes, that can be enjoyed by everyone - especially anyone following a low fodmap eating plan as it’s really gentle on your system.

Serves 4.

Ingredients:  

6 medium Maris pipers (use 1 or 2 potatoes per person)

1 large sweet potato

Salt and cracked black pepper

1/4 cup almond milk (or milk of your choosing)

3 tbsp nutritional yeast (feel free to leave out or switch out for some grated cheese/ vegan cheese)

Knob of butter/ dairy free butter

Salted boiling water

1 sprig of rosemary

 

Method:  

Peel the potatoes and sweet potato and cut in to small, evenly sized cubes. Add to a pan of salted boiling water along with the rosemary and boil for 20 minutes or until lovely and soft. Drain, remove the rosemary and leave the potatoes in the colander for a few minutes to steam. 

Pop back in the pan on a low heat.

Mash with a potato masher, add a knob of butter, almond milk, nutritional yeast, salt and pepper. Continue to mash until beautifully smooth and fluffy, adding a little  more milk, if necessary, to achieve your desired consistency. Spoon into a serving bowl. Top with a little more butter and season well.
