Miso glazed baked broccoli

It doesn’t take much to make vegetables taste delicious. With just a few simple ingredients this recipe will take broccoli to the next level. This is something I make all the time and serve as a side dish, add it to salads and Buddha bowls or have as a snack. I hope you love it as much as I do.

Note:  1 cup of broccoli is the serving size suitable for most people following a low fodmap diet. This stuff is deliciously moorish so be mindful of not going above the 1 cup portion if coniferous vegetables tend to be a symptom trigger for you. If broccoli doesn’t  cause any fluctuations in your symptoms then tuck in and have as much as you want.

Ingredients

1 broccoli head

1 tablespoon miso paste

1 tablespoon garlic infused olive oil

1 tablespoon maple syrup

Juice of 1/2 a lemon

Pinch of salt and pepper

Pinch of chilli flakes 

Method

Preheat the oven to 180°C

Line a baking tray with greaseproof paper.

Chop the broccoli into florets then, in a bowl, mix all the other ingredients together until smooth. Add the broccoli and toss it in the glaze so that each floret is coated, then arrange in one layer on the baking tray.

Bake for about for 20 minutes, giving the tray a good shake half way through, or until the edges are just starting to catch and caramelise.
