Cacao and coconut chia overnight oats

When I was little kid, I loved to mix cereals together to create a new combination of flavours and textures, to make boring breakfasts a wee bit more interesting. As you can see, not much has changed here with this simple but delicious overnight oat mix. You have the creamy, filling yet still light coconut oats and the deliciously rich chocolate oats combined to make a match made in heaven.

 

This recipes makes enough for two servings so you can make it for two people or as a fuss free breakfast for one person to enjoy, two days in a row.

 

Serves 2.

Ingredients

Coconut oats:

1/2 cup oats

1 cup almond milk

2 tablespoon coconut yoghurt - I use coyo

2 tablespoon chia seeds

1 tablespoon desiccated coconut

Chocolate oats:

1/2 cup oats

1 cup almond milk

2 tbsp chia seeds

1 1/2 teaspoons cacao

1 teaspoon vanilla extract

 

Method

Take two Tupperware containers or bowls.

Mix the coconut oats ingredients in one bowl and the chocolate oats ingredients in the other. Cover and pop into the fridge overnight.

Serve half the coconut and half the chocolate oats by layering, swirling together or simply side by side in a bowl, along with a section of your favourite toppings.
